The workshop

François-Louis Toussaint, knifemaker since 2010

I have worked in knifemaking since 2010. After training in artistic ironwork and in the Thiers knifemaking area, I spent ten years in a fine cutlery house, including as a project manager. I opened my Courpière workshop in 2022.

That background taught me that a knife is judged in use and that consistency matters as much as the starting idea.

What is done in the workshop

Each model begins with my own drawing and cutting files before I programme and oversee laser cutting.

Heat treatment, grinding, assembly, fitting, finishing, sharpening and final inspection follow. One-off and non-standard knives are made entirely in the workshop, including hardening. On some production models, hardening and preliminary grinding may be entrusted to specialist partners.

I prefer to state precisely who does what rather than make an undefined handmade claim.
